Carrot cake

    Materials

      Dough:
     -2 large grated carrots
     -150g ground almonds
     -2 tsp cinnamon

     -1/2 tsp nutmeg
     -2 tsp baking powder
     -3 eggs separated into whites and yolks
     -80g sugar or stevia of choice

    Frosting:
     -3 tablespoons powdered sugar or powdered stevia
     -150g. cream cheese (Philadelphia) light

     -a few chopped walnuts (optional)

    Implementation

    1. Mix the yolks with the sugar in a blender until it becomes a
    uniform mixture.
    2.
    Add the ground almonds and grated carrots and
    mix. Finally add the cinnamon, nutmeg and baking powder.
    3. In a separate bowl, beat the egg whites into a meringue and add it
    slowly into
    the other mixture. This is essentially the secret to making
    Our cake is fluffy.
    4. Bake at 180 degrees for
    approximately 35-40 minutes.
    5. In the meantime, beat the powdered sugar with the cream cheese in a blender.
    until it becomes a soft cream and put it in the refrigerator until it is
    cake.
    6. Take out the cake, let it cool and then decorate it with
    frosting and anything else you want, such as nuts and cinnamon.
